Food and Wine Pairing Appreciation

Subject Description
Food and Wine Pairing Appreciation. This course will provide students with a clear understanding of the direct and interacting effects of food and wine elements on the perception of matching. Students will develop the skills necessary to identify the key elements in food or wine that will directly impact its matching based on contrast or similarities. There will be nominal lab fee charged for field trips and pairing workshop with the LCBO Education Seminar Series.

Learning Outcomes
Upon successful completion of this subject the student will be able to:

1.  Understand the basics of wine evaluation and the hierarchy of taste concepts
2.  Establish the foundation taste components of sweet, sour, salt and bitter in food, and dry, acidity, and effervescence in wine, and recognize how these components relate to one another
3.  Examine the impact that spice, flavour type, flavour intensity, and flavour persistency have on the quality of wine and food pairings
4.  Apply a systematic process for predicting successful matches of food and wine using sequential and mixed tasting methods
5.  Provide guidance on pairing wine with foods such as cheese and various desserts, as well as, service issues

Camera Use and Recordings - Synchronous (Live) Classes
Synchronous (live) classes may be delivered in person, in a Flexible Learning space, or online through a Seneca web conferencing platform such as MS Teams or Zoom. Flexible Learning spaces are equipped with cameras, microphones, monitors and speakers that capture and stream instructor and student interactions, providing an in-person experience for students choosing to study online.

Students joining a live class online may be required to have a working camera in order to participate, or for certain activities (e.g. group work, assessments), and high-speed broadband access (e.g. Cable, DSL) is highly recommended. In the event students encounter circumstances that impact their ability to join the platform with their camera on, they should reach out to the professor to discuss. Live classes may be recorded and made available to students to support access to course content and promote student learning and success.
